A rustic Romanian mushroom stew made hearty and plant-based. Perfect with polenta, mashed potatoes, or crusty bread.
📌 Ingredients (2 servings)
- 300 g mushrooms (mixed is best)
- 1 onion, diced
- 1 carrot, diced
- 2 cloves garlic, minced
- 2 tbsp sunflower oil
- 1 tbsp flour
- 1 tsp sweet paprika (smoked optional)
- 200 ml veg stock
- 1 bay leaf
- 1 tsp soy sauce (optional)
- Fresh parsley or dill
- Salt & pepper
👩🍳 Method
- Sauté onion & carrot in oil until soft. Add garlic + paprika.
- Add mushrooms, cook until golden and liquid reduces.
- Sprinkle flour, stir, then slowly pour in stock. Add bay leaf.
- Simmer 10–12 mins until thick and glossy.
- Season, stir in soy sauce, finish with fresh herbs.
