Artichoke salad

Ingredients

  • Mixed salad leaves
  • ½ Avocado – chopped
  • 1 Tomato – sliced
  • Pimento olives
  • Small jar of artichoke hearts – I used a little of the oil the artichokes were preserved in as salad dressing

Instructions

  • Add all ingredients in a bowl

Notes

This salad goes well alongside a mezze platter or buffet style lunch, vegan bbq or simply enjoyed on its own.
