Ingredients
- Mixed salad leaves
- ½ Avocado – chopped
- 1 Tomato – sliced
- Pimento olives
- Small jar of artichoke hearts – I used a little of the oil the artichokes were preserved in as salad dressing
Instructions
- Add all ingredients in a bowl

This salad goes well alongside a mezze platter or buffet style lunch, vegan bbq or simply enjoyed on its own.
