Lentil & Walnut Tacos

These lentil & walnut tacos are a game-changer for taco night! The rich, hearty filling has the perfect texture and depth of flavour, making it a satisfying plant-based alternative to traditional meat tacos. Topped with creamy avocado and a zesty sauce, these tacos are packed with protein, crunch, and bold, smoky goodness.


Ingredients (Serves 4-6)

πŸ›’ 1 small onion, finely chopped

πŸ›’ 2 cloves garlic, minced

πŸ›’ 1 cup cooked lentils (brown or green)

πŸ›’ 3/4 cup walnuts, finely chopped or pulsed in a food processor

πŸ›’ 2 tbsp tomato paste

πŸ›’ 1 tbsp soy sauce (or tamari for gluten-free)

πŸ›’ 1 tsp smoked paprika

πŸ›’ 1 tsp ground cumin

πŸ›’ 1/2 tsp chilli powder (adjust to taste)

πŸ›’ 1/2 tsp oregano

πŸ›’ 1/4 cup vegetable stock (if needed)

πŸ›’ Salt & black pepper to taste

For serving:

πŸ›’ Small tortillas (flour or corn)

πŸ›’ 1 ripe avocado, sliced

πŸ›’ 1/2 cup guacamole or avocado crema

πŸ›’ Fresh coriander, chopped

πŸ›’ Lime wedges


How to Make It:

1️⃣ SautΓ© the aromatics – Heat olive oil in a pan over medium heat. Add the onion and cook for 3-5 minutes, until soft. Stir in the garlic and cook for another minute.

2️⃣ Add the lentils & walnuts – Stir in the lentils, walnuts, tomato paste, soy sauce, smoked paprika, cumin, chilli powder, and oregano.

3️⃣ Simmer & season – Cook for 5 minutes, stirring occasionally. If the mixture looks dry, add a splash of vegetable stock. Season with salt and black pepper to taste.

4️⃣ Warm the tortillas – Heat tortillas in a dry pan or wrap them in foil and warm in the oven for a few minutes.

5️⃣ Assemble the tacos – Spoon the lentil & walnut filling into each tortilla, then top with avocado slices, guacamole, fresh coriander, and a squeeze of lime.

6️⃣ Serve & enjoy – These tacos are best served fresh, but the filling stores well for meal prep!
