🌱 Tocană de Ciuperci (Romanian Mushroom Stew)

A rustic Romanian mushroom stew made hearty and plant-based. Perfect with polenta, mashed potatoes, or crusty bread.

📌 Ingredients (2 servings)

  • 300 g mushrooms (mixed is best)
  • 1 onion, diced
  • 1 carrot, diced
  • 2 cloves garlic, minced
  • 2 tbsp sunflower oil
  • 1 tbsp flour
  • 1 tsp sweet paprika (smoked optional)
  • 200 ml veg stock
  • 1 bay leaf
  • 1 tsp soy sauce (optional)
  • Fresh parsley or dill
  • Salt & pepper

👩‍🍳 Method

  1. Sauté onion & carrot in oil until soft. Add garlic + paprika.
  2. Add mushrooms, cook until golden and liquid reduces.
  3. Sprinkle flour, stir, then slowly pour in stock. Add bay leaf.
  4. Simmer 10–12 mins until thick and glossy.
  5. Season, stir in soy sauce, finish with fresh herbs.
