Sweet Potato & Kidney Bean Chilli

This hearty, sweet potato and kidney bean chilli is packed with flavour, warmth, and plant-based goodness. Itโ€™s rich, slightly spicy, and topped with creamy avocado, dairy-free sour cream, and fresh herbs for the perfect finishing touch. Ideal for a cosy dinner or meal prep!


Ingredients (Serves 4-6)

๐Ÿ›’ 1 tbsp olive oil

๐Ÿ›’ 1 onion, finely chopped

๐Ÿ›’ 3 cloves garlic, minced

๐Ÿ›’ 1 red bell pepper, diced

๐Ÿ›’ 2 medium sweet potatoes, peeled & diced

๐Ÿ›’ 2 cans (400g each) kidney beans, drained & rinsed

๐Ÿ›’ 1 can (400g) chopped tomatoes

๐Ÿ›’ 500ml vegetable stock

๐Ÿ›’ 2 tbsp tomato paste

๐Ÿ›’ 1 tsp smoked paprika

๐Ÿ›’ 1 tsp ground cumin

๐Ÿ›’ 1/2 tsp ground cinnamon

๐Ÿ›’ 1/2 tsp chilli powder (adjust to taste)

๐Ÿ›’ Salt & black pepper to taste

๐Ÿ›’ Juice of 1 lime

For toppings:

๐Ÿ›’ 1 ripe avocado, sliced

๐Ÿ›’ Dairy-free sour cream (or coconut yogurt)

๐Ÿ›’ Fresh coriander, chopped

๐Ÿ›’ Chopped chives


How to Make It:

1๏ธโƒฃ Sautรฉ the aromatics โ€“ Heat olive oil in a large pot over medium heat. Add the onion and cook for 5 minutes until softened. Stir in the garlic and cook for another minute.

2๏ธโƒฃ Add the spices โ€“ Mix in the smoked paprika, cumin, cinnamon, and chilli powder, stirring for about 30 seconds until fragrant.

3๏ธโƒฃ Cook the veggies โ€“ Add the sweet potatoes and red bell pepper, stirring to coat in the spices.

4๏ธโƒฃ Simmer the chilli โ€“ Pour in the chopped tomatoes, kidney beans, vegetable stock, and tomato paste. Bring to a simmer and cook for about 20-25 minutes, or until the sweet potatoes are tender.

5๏ธโƒฃ Season & finish โ€“ Stir in the lime juice, then season with salt and black pepper to taste. Adjust spice levels if needed.

6๏ธโƒฃ Serve & garnish โ€“ Ladle the chilli into bowls and top with sliced avocado, dairy-free sour cream, fresh coriander, and chopped chives.
