BBQ Jackfruit Sandwiches

These smoky BBQ jackfruit sandwiches are the perfect plant-based alternative to pulled pork – tender, flavour-packed, and incredibly satisfying. Served in a soft bun with crisp lettuce, crunchy red cabbage, and a dollop of dairy-free mayo, this is the ultimate comfort food with a healthy twist.


Ingredients (Serves 4)

πŸ›’ 2 cans (400g each) young green jackfruit in water or brine, drained & rinsed

πŸ›’ 1 tbsp olive oil

πŸ›’ 1 small onion, finely chopped

πŸ›’ 2 cloves garlic, minced

πŸ›’ 1 tsp smoked paprika

πŸ›’ 1/2 tsp ground cumin

πŸ›’ 1/2 tsp chilli powder (optional)

πŸ›’ 1 cup (250ml) BBQ sauce (check for vegan-friendly ingredients)

πŸ›’ 1 tbsp maple syrup (optional for extra sweetness)

πŸ›’ 1 tbsp apple cider vinegar

πŸ›’ 1/2 cup (120ml) vegetable stock

πŸ›’ Salt & black pepper to taste

For serving:

πŸ›’ 4 burger buns or sandwich rolls

πŸ›’ Lettuce leaves

πŸ›’ 1/2 cup shredded red cabbage

πŸ›’ Dairy-free mayo or coleslaw (optional)


How to Make It:

1️⃣ Prepare the jackfruit – Use your hands or a fork to shred the jackfruit into pieces, removing any tough core bits.

2️⃣ SautΓ© the aromatics – Heat olive oil in a pan over medium heat. Add the onion and cook for 3-5 minutes until soft. Stir in the garlic and cook for another minute.

3️⃣ Season & cook – Add the smoked paprika, cumin, and chilli powder, stirring for about 30 seconds until fragrant. Then, add the jackfruit and mix well to coat in the spices.

4️⃣ Simmer the BBQ sauce – Stir in the BBQ sauce, maple syrup, apple cider vinegar, and vegetable stock. Let simmer for 15-20 minutes, stirring occasionally, until the jackfruit is soft and has absorbed the sauce. If needed, use a fork to shred it more as it cooks.

5️⃣ Assemble the sandwiches – Toast the burger buns if desired, then layer with lettuce, BBQ jackfruit, shredded cabbage, and a dollop of dairy-free mayo or coleslaw.
