BBQ Jackfruit Sandwiches
These smoky BBQ jackfruit sandwiches are the perfect plant-based alternative to pulled pork – tender, flavour-packed, and incredibly satisfying. Served in a soft bun with crisp lettuce, crunchy red cabbage, and a dollop of dairy-free mayo, this is the ultimate comfort food with a healthy twist.
Ingredients (Serves 4)
π 2 cans (400g each) young green jackfruit in water or brine, drained & rinsed
π 1 tbsp olive oil
π 1 small onion, finely chopped
π 2 cloves garlic, minced
π 1 tsp smoked paprika
π 1/2 tsp ground cumin
π 1/2 tsp chilli powder (optional)
π 1 cup (250ml) BBQ sauce (check for vegan-friendly ingredients)
π 1 tbsp maple syrup (optional for extra sweetness)
π 1 tbsp apple cider vinegar
π 1/2 cup (120ml) vegetable stock
π Salt & black pepper to taste
For serving:
π 4 burger buns or sandwich rolls
π Lettuce leaves
π 1/2 cup shredded red cabbage
π Dairy-free mayo or coleslaw (optional)
How to Make It:
1οΈβ£ Prepare the jackfruit β Use your hands or a fork to shred the jackfruit into pieces, removing any tough core bits.
2οΈβ£ SautΓ© the aromatics β Heat olive oil in a pan over medium heat. Add the onion and cook for 3-5 minutes until soft. Stir in the garlic and cook for another minute.
3οΈβ£ Season & cook β Add the smoked paprika, cumin, and chilli powder, stirring for about 30 seconds until fragrant. Then, add the jackfruit and mix well to coat in the spices.
4οΈβ£ Simmer the BBQ sauce β Stir in the BBQ sauce, maple syrup, apple cider vinegar, and vegetable stock. Let simmer for 15-20 minutes, stirring occasionally, until the jackfruit is soft and has absorbed the sauce. If needed, use a fork to shred it more as it cooks.
