Lentil & Walnut Tacos

These lentil & walnut tacos are a game-changer for taco night! Ingredients (Serves 4-6)

๐Ÿ›’ 1 tbsp olive oil

๐Ÿ›’ 1 small onion, finely chopped

๐Ÿ›’ 2 cloves garlic, minced

๐Ÿ›’ 1 cup cooked lentils (brown or green)

๐Ÿ›’ 3/4 cup walnuts, finely chopped or pulsed in a food processor

๐Ÿ›’ 2 tbsp tomato paste

๐Ÿ›’ 1 tbsp soy sauce (or tamari for gluten-free)

๐Ÿ›’ 1 tsp smoked paprika

๐Ÿ›’ 1 tsp ground cumin

๐Ÿ›’ 1/2 tsp chilli powder (adjust to taste)

๐Ÿ›’ 1/2 tsp oregano

๐Ÿ›’ 1/4 cup vegetable stock (if needed)

๐Ÿ›’ Salt & black pepper to taste

For serving:

๐Ÿ›’ Small tortillas (flour or corn)

๐Ÿ›’ 1 ripe avocado, sliced

๐Ÿ›’ 1/2 cup guacamole or avocado crema

๐Ÿ›’ Fresh coriander, chopped

๐Ÿ›’ Lime wedges


How to Make It:

1๏ธโƒฃ Sautรฉ the aromatics โ€“ Heat olive oil in a pan over medium heat. Add the onion and cook for 3-5 minutes, until soft. Stir in the garlic and cook for another minute.

2๏ธโƒฃ Add the lentils & walnuts โ€“ Stir in the lentils, walnuts, tomato paste, soy sauce, smoked paprika, cumin, chilli powder, and oregano.

3๏ธโƒฃ Simmer & season โ€“ Cook for 5 minutes, stirring occasionally. If the mixture looks dry, add a splash of vegetable stock. Season with salt and black pepper to taste.

4๏ธโƒฃ Warm the tortillas โ€“ Heat tortillas in a dry pan or wrap them in foil and warm in the oven for a few minutes.

5๏ธโƒฃ Assemble the tacos โ€“ Spoon the lentil & walnut filling into each tortilla, then top with avocado slices, guacamole, fresh coriander, and a squeeze of lime.
