One-Pot Tomato & Basil Pasta

Ingredients (Serves 4)

🛒 1 tbsp olive oil

🛒 3 cloves garlic, minced

🛒 1 can (400g) chopped tomatoes

🛒 500ml vegetable stock

🛒 250g pasta of choice (penne, fusilli, or casarecce)

🛒 1 tsp dried oregano

🛒 1/2 tsp chilli flakes (optional)

🛒 Salt & black pepper to taste

🛒 Handful of fresh basil leaves, roughly torn

🛒 1 tbsp nutritional yeast (optional, for a cheesy flavour)


How to Make It:

1️⃣ Sauté the garlic – Heat olive oil in a large pot over medium heat. Add the minced garlic and cook for 30 seconds to 1 minute, until fragrant.

2️⃣ Add the sauce ingredients – Pour in the chopped tomatoes, vegetable stock, dried oregano, and chilli flakes (if using). Stir well.

3️⃣ Cook the pasta – Add the pasta directly to the pot, ensuring it’s submerged in the liquid. Bring to a gentle simmer and cook according to the pasta’s package instructions, stirring occasionally.

4️⃣ Adjust seasoning – Once the pasta is cooked and the sauce has thickened, season with salt and black pepper to taste. Stir in the fresh basil and nutritional yeast if using.

5️⃣ Serve & enjoy – Dish up while hot, garnished with extra basil. Pair with garlic bread or a side salad for a complete meal.
