
Sweet Potato & Kidney Bean Chilli
This hearty, sweet potato and kidney bean chilli is packed with flavour, warmth, and plant-based goodness. Itโs rich, slightly spicy, and topped with creamy avocado, dairy-free sour cream, and fresh herbs for the perfect finishing touch. Ideal for a cosy dinner or meal prep!
Ingredients (Serves 4-6)
๐ 1 tbsp olive oil
๐ 1 onion, finely chopped
๐ 3 cloves garlic, minced
๐ 1 red bell pepper, diced
๐ 2 medium sweet potatoes, peeled & diced
๐ 2 cans (400g each) kidney beans, drained & rinsed
๐ 1 can (400g) chopped tomatoes
๐ 500ml vegetable stock
๐ 2 tbsp tomato paste
๐ 1 tsp smoked paprika
๐ 1 tsp ground cumin
๐ 1/2 tsp ground cinnamon
๐ 1/2 tsp chilli powder (adjust to taste)
๐ Salt & black pepper to taste
๐ Juice of 1 lime
For toppings:
๐ 1 ripe avocado, sliced
๐ Dairy-free sour cream (or coconut yogurt)
๐ Fresh coriander, chopped
๐ Chopped chives
How to Make It:
1๏ธโฃ Sautรฉ the aromatics โ Heat olive oil in a large pot over medium heat. Add the onion and cook for 5 minutes until softened. Stir in the garlic and cook for another minute.
2๏ธโฃ Add the spices โ Mix in the smoked paprika, cumin, cinnamon, and chilli powder, stirring for about 30 seconds until fragrant.
3๏ธโฃ Cook the veggies โ Add the sweet potatoes and red bell pepper, stirring to coat in the spices.
4๏ธโฃ Simmer the chilli โ Pour in the chopped tomatoes, kidney beans, vegetable stock, and tomato paste. Bring to a simmer and cook for about 20-25 minutes, or until the sweet potatoes are tender.
5๏ธโฃ Season & finish โ Stir in the lime juice, then season with salt and black pepper to taste. Adjust spice levels if needed.
6๏ธโฃ Serve & garnish โ Ladle the chilli into bowls and top with sliced avocado, dairy-free sour cream, fresh coriander, and chopped chives.
