Ingredients


Makes 4 servings (8 tacos)

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup diced mushrooms
  • 1 cup cooked black beans
  • 1/2 cup corn kernels
  • 1/2 cup diced tomatoes
  • 1 teaspoon chilli powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 8 taco shells
  • 1/2 cup shredded lettuce
  • 1/2 cup diced avocado
  • 1/2 cup vegan sour cream or cashew cream
  • 1/2 cup chopped cilantro

Instructions


Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and sauté for 2-3 minutes, until softened.

Add the red bell pepper and mushrooms and cook for an additional 3-4 minutes, until the vegetables are tender.

Stir in the black beans, corn, tomatoes, chilli powder, cumin, paprika, and salt. Cook for another 2-3 minutes, until heated through.

Meanwhile, warm the taco shells according to the package instructions.

To assemble the tacos, divide the filling evenly among the taco shells. Top with shredded lettuce, diced avocado, vegan sour cream or cashew cream, and chopped cilantro.
