  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar (or coconut sugar)
  • 1 large banana, mashed
  • 1/2 cup vegetable oil
  • 1 cup soya milk (or other non-dairy milk)
  • 2 teaspoons vanilla extract
  • 1 1/2 cups blueberries (fresh or frozen)

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a separate mixing bowl, whisk together the granulated sugar, brown sugar, banana, vegetable oil, soya milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix, as this can lead to tough muffins.
  5. Gently fold in the blueberries, being careful not to crush them.
  6. Use a spoon, a 1/4 measuring cup or cookie scoop to divide the batter evenly among the muffin cups, filling each about 3/4 full.
  7. (Optional) Sprinkle some sugar on top of each muffin.
  8. Bake for 15 minutes, then check and turn the tray.
  9. Bake for 10 more mins or until a toothpick inserted into the centre of a muffin comes out clean
  10. Allow the muffins to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.
