This simple breakfast is super quick to make and will provide slow releasing energy, fibre and nutrients to help start your day.

Makes 1 serving

Ingredients:

  • Water: ½ pint
  • Soya milk: ½ pint – divided into two equal parts
  • Porridge oats: 2 oz
  • Maple syrup: 1 tsp
  • Flaxseeds and Pumpkin seeds: 1 tbsp

Instructions:

  1. Measure out your ingredients to have them ready.
  2. In a medium-sized saucepan, combine the water and half of the soya milk and oats. Place the pan on the stove and turn the heat to medium.
  3. Continue to cook the oats on medium heat, stirring occasionally to prevent sticking at the bottom. Cook until the oats have absorbed most of the liquid and have a creamy consistency. This should take about 5-6 minutes.
  4. Remove the saucepan from the heat. Pour the porridge into a bowl.
  5. Pour the remaining soya milk around the porridge in the bowl.
  6. Sprinkle the flax and other seeds over the top of the porridge. Drizzle the maple syrup over the top.
  7. Serve while hot and savor your nutritious and delicious breakfast!

Note: You can adjust the amount of soya milk added at the end if you prefer more or less liquid around your porridge.
