Ingredients
- 2.3kg ripe plums
- 500ml water
- 2.3kg jam sugar with pectin
Instructions
- Wash 2.3kg of ripe Victoria plums and remove their stones.
- Cut the plums into small pieces.
- In a large pan, bring 500ml of water to a boil.
- Add the plum pieces to the boiling water and simmer rapidly for 40 minutes or until the fruit is soft.
- Remove the pan from heat and stir in 2.3kg of jam sugar with pectin.
- Return the pan to the heat and bring the mixture to a boil again.
- Use a sugar thermometer to check the temperature of the mixture until it reaches 105 degrees Celsius, also known as the Set Point.
- Once the Set Point has been reached, pour the mixture into sterilised jars and let it cool.
