Ingredients

  • 2 tbsp vegetable oil
  • 12 vegan sausages
  • 1 leek, sliced
  • 1 small red onion, sliced
  • 2 sticks of celery, sliced (including leaves if attached)
  • 3 cloves of garlic, crushed
  • 1 green pepper, cubed
  • 2 carrots, cubed
  • 2 parsnips, cubed
  • 1/2 swede (rutabaga), cubed
  • 1 small turnip, cubed
  • 1/2 cup dried mixed herbs
  • 3 heaped tsp bullion powder
  • 500ml boiling water
  • Salt and pepper to taste

Method

Heat the vegetable oil in a large pot or dutch oven over medium heat.

Add the vegan sausages and cook for about 5 minutes, until browned on all sides.

Add the leek, red onion, celery, garlic, and green pepper to the pot. Cook for about 5 minutes, until the vegetables are softened.

Add the carrots, parsnips, swede, and turnip to the pot. Cook for about 5 minutes, until the vegetables are slightly softened.

Stir in the dried mixed herbs and bullion powder, and pour in the boiling water.

Bring the stew to a boil, then reduce the heat to a simmer and cover the pot.

Cook for about 30 minutes, until the vegetables are tender and the flavors have melded together.

Season the stew with salt and pepper to taste, and serve hot.
