Ingredients


  • 1 cup raw cashews, soaked in water for at least 2 hours or overnight
  • 2 tablespoons nutritional yeast
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 cup vegan cream cheese
  • 2 tablespoons finely chopped fresh herbs (such as basil, parsley, or chives)

Instructions


Drain and rinse the soaked cashews, then add them to a food processor or blender.

Add the nutritional yeast, garlic powder, onion powder, and salt to the food processor or blender.

Pulse the mixture until it is smooth and well combined.

Transfer the mixture to a mixing bowl and stir in the vegan cream cheese and herbs until well combined.

Shape the mixture into small balls, about the size of a cherry tomato.

Roll the balls in additional chopped herbs or your choice of coating (such as panko bread crumbs or crushed nuts).

Place the cheese balls on a plate or tray and refrigerate for at least 30 minutes to allow them to firm up.
