makes 2 servings

Ingredients

  • 1 block of extra-firm tofu, crumbled
  • 1 small bell pepper, diced
  • 1 small onion, diced
  • 1 cup of packed spinach leaves
  • 1 tablespoon of olive oil
  • 1 teaspoon of turmeric
  • 1 teaspoon of paprika
  • 1/2 teaspoon of cumin
  • 1/2 teaspoon of garlic powder
  • Salt and pepper, to taste
  • 2 slices of whole grain toast
  • Chopped fresh herbs (optional)

Instructions

Heat the olive oil in a large pan over medium heat. Add the bell pepper and onion and sauté until they are soft, about 5-7 minutes.

Add the crumbled tofu, turmeric, paprika, cumin, garlic powder, and a pinch of salt and pepper to the pan. Stir well to combine.

Cook the tofu mixture for an additional 5-7 minutes, or until the tofu is heated through and the vegetables are tender.

Stir in the spinach leaves and cook for another 1-2 minutes, or until the spinach has wilted.

Toast the whole grain bread in a toaster or on a pan over medium heat until it is crispy.

Serve the tofu scramble on top of the toast and garnish with chopped fresh herbs, if desired. Enjoy!

Note: You can customize this recipe by adding in additional vegetables such as diced tomatoes or sliced mushrooms. You can also switch up the spices to your liking, such as adding a pinch of chilli flakes for some heat or using fresh herbs like basil or cilantro instead of dried spices.
