Noodle Soup

Ingredients


  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 small carrot, peeled and diced
  • 1 stalk celery, diced
  • 4 cups vegetable broth
  • 1 cup water
  • 1 cup uncooked noodles (use a vegan-friendly variety like brown rice or quinoa noodles)
  • 1 cup diced vegan chicken (such as tofu, tempeh, or seitan)
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • Salt and pepper, to taste

Instructions


Heat the olive oil in a large pot over medium heat. Add the onion, garlic, carrot, and celery, and sauté until the vegetables are tender, about 5-7 minutes.

Add the vegetable broth, water, noodles, vegan chicken, basil, and parsley to the pot. Bring the mixture to a boil, then reduce the heat to low and simmer for 15-20 minutes, or until the noodles are tender.

Season the soup with salt and pepper to taste. Serve hot and enjoy!
